Demetrio Sánchez’s delicious, clean, washed Geisha is back and once again in all its glory—just the way we love it! It has a jasmine-filled aroma and a flavor full of sweet apricots and mandarins; served chilled, it tastes like peach iced tea :)

About the Coffee:

Until 2019, Demetrio was growing root vegetables, corn, beans, and avocado on his farm at 2,100 masl. The cold, windy climate had always made coffee cultivation impossible until climate change altered everything. Recognizing the new potential for specialty coffee at this altitude, he planted geisha, pink bourbon, and aruzoon his 4-hectare plot. While the plants matured, he worked as an administrator on another farm. In 2022, Demetrio returned to his land to harvest and process his first coffee crops, which immediately stood out for their exceptional quality.

All 3 varieties are carefully picked every 3-4 weekssince flowering is constant. Post harvest processing begins with resting the cherries for 24 hours before depulping. The cherries are then floated and fermented in a closed tank for 40 hours. After fermentation, the coffee is fully washed and dried on raised beds under shade for about 15 days.

Demetrio’s farm practices polyculture, intercropping coffee with root vegetables, maize, avocados, beans, tree tomatoes, and plantains. This permaculture approach not only enhances the topsoil but also enriches the deeper soil with a variety of nutrients, minerals, and microorganisms. The farm’s high altitude and crop diversity naturally reduce pests. Additionally, polyculture provides the family with a diverse source of food and income.

How to understand the grid on the packaging?
We wanted to make it as easy as possible for you to choose your coffee, so we worked with the guys from Steezy Graphic Studio to come up with a “grid” – a simple grid where you can easily find the characteristics of each coffee.
The red dot next to the description of each coffee is placed exactly there, so that you can easily imagine how the coffee will taste.

Citrus - Chocolate
Here we’d like to give you an idea of how fruity the coffee will be. There’s a long way from citrus to chocolate, so imagine more in between:
citrus, berries, green apples, red apples, stone fruits, dried fruits, nuts, milk chocolate and dark chocolate 😉

Mild – wildWhat is mild coffee? We’d say it’s unpretentious. A coffee that you can just have every morning and not have to think too much about it. It’s just good.
