The beans come from the renowned Colombian farm Las Flores, which is run with great passion by farmer Jhoan Vergara in the Huila region (near Pitalito). Red Bourbon coffee trees grow here at an impressive altitude of 1,700 to 1,790 meters above sea level. Under these cooler, high-altitude conditions, the cherries have plenty of time to ripen slowly. And it is precisely this patience of nature that is reflected in the finished bean. This has given the coffee its natural sweetness, a brilliant, lively acidity, and that incredibly elegant floral-fruity profile that makes this harvest from autumn 2025 such a unique experience.
To bring out this delicate and fragrant profile in all its glory, Jhoan Vergara opted for the traditional Washed method. Immediately after hand-picking, the coffee cherries were stripped of their skin and pulp, and the beans were then subjected to a thorough water bath. This process removed all residual sugars from the pulp and ensured that the coffee received a crystal-clear body without wild or fermented notes. The beans were then dried on raised African beds, where their moisture content was stabilized by constant turning. In the roastery, the beans were precisely roasted so that this amazing taste can fully unfold in the cup.
